Apple Crisp

6 apples peeled, cored & cut into slices 1/2 inch thick 3/4 cup brown sugar 3/4 cup large flake oats 1/2 cup flour 1 tsp  cinnamon 1/2 cup cold unsalted butter Super easy apple crisp! You can top it with any of your favorite treats like ice cream, whipped cream or dream whip, chocolate fudge, caramel, nuts or cherries. Pre-heat your oven to 375 degrees F. First thing you're going to want to do is prep your apples. Peel, core, and cut each apple into 1/2 inch thick slices. Combine in another bowl the brown sugar, oats, flour, cinnamon. Press a large fork through the butter to create several small pieces to mix into the oat & sugar bowl. Remember to use cold unsalted butter so it doesn't go soft and clump together. Blend your "shredded" butter into the oat & sugar mixture. Place the apple slices into your greased pan and sprinkle on oats. I gave the pan a little drop and shake to even out the oat topping before pu...

Breakfast Wrap

Just your classic omelette inside a tortilla wrap. You can add any ingredients you like to a couple of beaten eggs and a splash of milk! Make sure to prep and have ready any extra ingredients like bacon bits or chunks of ham, veggies, grated cheese and spices.  Fry up any meat you have to add in. I cut up hot dogs into 1/2 inch coins. I prepped and chopped  grated cheese, red peppers, green onions to add to the meat.   Add all the ingredients to your beaten eggs, milk, and add salt and peppers desired. Using your favourite frying pan 😉 Melt 1-2 tablespoons of unsalted butter.  Once all the butter has melted and the pan has warmed up, add egg mixture. Let the omelette cook. Traditionally you would cook covered for a couple minutes then fold over the omelette in half.   I decided to make more of a scrambled omelette... After letting the egg mixture cook away, pull back the egg from the outsides of the pan as you would w...

Crispy Breaded Zucchini Coins

I came across this recipe by @damn_delicious one day. Check our her other dishes & if you’re a dog lover like I am,  you’ll love her Instagram stories. Follow her little corgi Butters on his daily adventures with mom and dad. He is adorable and has such a cheeky personality! 🐶 With this recipe I ardded a few things to the panko bread crumbs. Salt, pepper, and chopped rosemary. They turned out great! Don’t forget to lightly salt them once fried. A great addition to these golden coins would be a creamy garlic or ranch dip! Yummy! 😁 First prep your flour,  beaten eggs, and bread crumbs   Submerge them into your egg mixture making sure they get fully coated and let excess drain off a bit before covering them in bread crumbs!       You might have to push the bread crumbs down for a thick and even layer.  Repeat with all your zucchini coins and set aside till your ready to fry.      ...

Veggie Noodle Soup

5 cups water 4 packages of chicken broth 2-3 sticks of celery 2-3 carrots 2 sprigs of rosemary 3 small garlic cloves 2 cups rotini pasta Salt & Pepper This recipe is a nice base for a soup that can be turned into something super hearty by adding a few more star ingredients. Next time I would add chicken or mini meatballs and maybe diced potatoes but I am short on groceries. I have been sick as a dog all weekend and am home today looking for something warm, comforting, and fast. Make sure you have all your ingredients out and your veggies cut, about 1 inch thick. Peel the garlic cloves and gently crush them. Same with the sprigs of rosemary, I didn’t cut them up, only bruised by crumpling them up in my hands.  *TIP* For a more mild/sweet garlic taste I pick out the small cloves in the middle of the garlic head. I ended up using 2 pots, one to boil the pasta, another larger one to cook broth and veggies and add the pasta to finish cookin...

Scalloped Potatoes

Wanted to make this creamy cheesy dish from scratch without using heavy cream. I found @hellocomfortkitchen’s cheesy scalloped potato gratin recipe and added a couple extras. For meat/ham, I added bologna and cut them up into matchsticks.  I didn’t have white onions, only onion powder and though some garlic powder would be good! 😉 2 lbs. medium potatoes, yellow/Yukon gold , peeled out eyes 3 Tablespoons margerine 1 slice Bologna cut up into 2 inch long matchsticks  1 teaspoon onion & garlic powder 3 Tablespoons all-purpose flour 2 cups milk (2%) 1 teaspoon dijon mustard 1/2 teaspoon  cayenne pepper 1/2 teaspoon salt 2 cups (8 oz.) Shredded Cheese (I used marble) 1/2 cup crushed Ritz crackers Preheat oven to 350 degrees F. Cut potatoes into 1/4-inch thick slices and set aside. Have bologna cut up and ready to assemble with the grated cheese.   Start melting butter in saucepan. Add onion and garlic powder, whisk togethe...

Chicken Salad Wrap Pinwheels

Super easy snack, play around with different ingredients in your chicken salad ! I made 2 different chicken salads both with mayonnaise.  I divided my mixture of mayonnaise, shredded grilled chicken breast and grated marble cheese into to 2 parts. Left one as is and added a couple extra ingredients to the second portion of salad.  I added chopped celery and some ceaser salad dressing.  Spread a thin layer (1/4-1/2 inch ) of salad on top of your tortilla.  Start rolling up your tortilla from one end, keeping it nice and tight! I then started cutting slices, tip for next time, wrap the tortilla tub up with plastic wrap and put it in the fridge to firm up.  Make sure the knife you use to cut the rolls is nice and sharp.  Place them on plate and munch out! Or pop them into the fridge until it’s go time! You can add anything you like!  I’m thinking about adding some mushrooms and red peppers next time I make these LOL...
