Apple Crisp

6 apples peeled, cored & cut into slices 1/2 inch thick
3/4 cup brown sugar
3/4 cup large flake oats
1/2 cup flour
1 tsp cinnamon
1/2 cup cold unsalted butter

Super easy apple crisp!
You can top it with any of your favorite treats like ice cream, whipped cream or dream whip, chocolate fudge, caramel, nuts or cherries. Pre-heat your oven to 375 degrees F. First thing you're going to want to do is prep your apples. Peel, core, and cut each apple into 1/2 inch thick slices.


Combine in another bowl the brown sugar, oats, flour, cinnamon.


Press a large fork through the butter to create several small pieces to mix into the oat & sugar bowl. Remember to use cold unsalted butter so it doesn't go soft and clump together. Blend your "shredded" butter into the oat & sugar mixture.



Place the apple slices into your greased pan and sprinkle on oats. I gave the pan a little drop and shake to even out the oat topping before putting in the oven!


Cook this baby for 30-35 minutes, till the apples are soft and oat mixture is bubbly!

Wanted to make this creamy cheesy dish from scratch without using heavy cream. I found @hellocomfortkitchen’s cheesy scalloped potato gratin recipe and added a couple extras. Roasted Potatoes w/ Bologna & Garlic Butter

Check these babies out! I changed up the original recipe and added bologna 😉 Started with picking out nice sized potatoes. I used yellow potatoes, cut the eyes and the bad spots out. Then cut slits almost 3/4 through the potato and about 1/8 - 1/4 inch thick. Go slow and take your time cutting these. Melt some butter, veggie oil, chopped garlic, salt and pepper in the microwave.  Slowly spoon butter over top of the potatoes while opening each cut to let butter seep in between.  Get those little chunks of garlic in too! Cut strips of bologna to slide into the cuts, between each potato slice. I skipped over every 2 cuts/slice so the potato wasn’t over powered by meat. 😊  Topped these beauties with grated marble cheese! Cover them with tin foil, poke slits on top then put in the oven at 400 °   for 35 minuets.  For a golden brown top, uncover and put back in for another 10 minutes.

Steak Soup

Steak Soup I saw a noodle soup like this and wanted to make something similar with left over steak and w/o noodles. I'm home sick and craving an easy rich soup, while staying on the low carb diet. T his is what I came up with! 1-2 tsp butter Leftover steak, cut up 1 cup broccoli cut into thick match stick sizes 1 cup boiling water 1 pkg beef oxo broth seasoning Salt & Pepper to taste Prep broccoli and beef, cut them into smaller pieces. In a sauce pan melt butter and fry up beef pieces till warmed and slightly seared. Set beef aside.  Add boiling water and the beef seasoning to the hot pot. Dissolve the seasoning and bring to a simmer. Season the broth with salt and pepper.  Add the beef and broccoli to broth, stir and let simmer.  Serve! Add grated parm?
